This recipe is so simple and quick to make but tastes heavenly and it has to be our favourite salad of the moment! I've used my egg-free mayonnaise in this recipe but you can use your own favourite if you wish.
Red Slaw
¼ red cabbage
½ red onion
2 carrots
1 red pepper
5 tblsps mayonnaise
2 tblsps raisins (optional)
- Thinly slice the cabbage, I do this on a plate because the last time I sliced it on a board it turned red!
- Grate the carrot.
- Thinly slice the red onion.
- Thinly slice the red pepper.
- Tip all the sliced vegetables into a bowl and mix together.
- Add 5 tablespoons of mayonnaise.
- If you are including raisins in the recipe, sprinkle them in.
- Mix well and serve straight away.
Serves 2-3.
